Tomato Sauce

Investigators set out to find the perfect runniness for tomato sauce- not too thick and not too thin, but just right.

How well tomato sauce flows (viscosity) can be tested in a machine called a Bostwick Consistometer. The consistometer measures the consistencies (viscosity) by measuring the distance the tomato sauce flowed in a given amount of time. Viscosity is a quantity that describes a fluid’s resistance to flow. This resistance is caused by the intermolecular attraction of the molecules making up the fluid. You can think of viscosity as the “thickness” of a fluid (a liquid in this case). So the higher a liquid’s viscosity, the harder it is to pour.
